Avocado Black Quinoa Salad

It can’t get more wholesome than this…Avocado Quinoa Salad .Two of my most favorite and most healthiest food’s of the world..together in one!

Quinoa is earthy,robust flavored superfood , Seeds are a great source of Iron and Protein . In earlier times it was called the mother of all grains . It’s gluten-free and consuming then drastically increases the Antioxidant and Nutrient Value of the diet lowing Blood Sugar and improving on Metabolic Health.As for Avocado , which also called the ‘Alligator Pear’ has way , way too many benefits to list . But then one I would like to highlight is that even though they are high on calories ; They are packed with Good-Fats or Monounsaturated Fat which are highly unlikely to be stored as Body-fat. And with these super foods I give you this simple recipe – Avocado Black Quinoa Salad.

cooking-time  Total time : 20 mins

serves  Serves : 2-4 people

Ingredients:

1/2 cup Raw Black Quinoa

1/4 cup Baby Spinach , remove the stems and wash thoroughly

1/4 cup Corn Kernels , Boiled

2 Avocados , Cut in Half

1 Green Jalapeño , Chopped

1 Red Jalapeño , Chopped

4 Tbsp Sour Cream

For Garnish:

Handful Parsley

Few Segments of Orange & Grapefruit

Tajin Seasoning

For The Dressing:

 

1/4 cup of Zesty Vinaigrette

Method:

Boil the Quinoa in 1 cup water , till it is sprouted. Keep aside to cool .

Once cooled add the quinoa , jalapeños and the corn.Mix well till the dressing has coated everything.

In the halved & de-seeded Avocado , place a few Baby Spinach and top of it . Along with the Quinoa mixture .

Pipe some sour cream on the side ,on the Avocado.

Place the orange segments along with the Parsley leaves on top.

Finally sprinkle some tajin , to finish.
