Baked Vanilla Greek Yogurt

It will take you all of 20 minutes to prepare this simple Baked Vanilla Greek Yogurt , but it will test your patience for a couple of hours as you will have to restrain yourself till it is completely chilled and ready to eat. Top it with the freshest sessional fruit and drizzle it with honey and it’s ready to be relished.
It is pretty close to how your cheesecake tastes , just this one is much lighter. It makes a great breakfast dish as well, as a dessert post meal. While you are choosing your greek yogurt, make sure it doesn’t belong to the ‘low-fat’ category for this recipe. Well,if you ask me I say never pick anything that has ‘low-fat’ or ‘diet’ on it’s packaging.They certainly aren’t healthy.So I would request you to either eat it right or don’t at all.

2 cups Greek Yogurt
3/4 cup cream
1/2 condensed milk
2 Vanilla beans
For the Topping
Fresh Fruits , I used Figs
4 tsp Honey , I used Pioneer Multi Flora Honey
Handful of dried fruits (optional) , I used pistachio and dried figs.
Pre-heat the oven at 150 degrees.
Whisk the yogurt, condensed milk and cream together till it comes to a smooth consistency.
Strain the mixture into another bowl just to make sure no lumps are left in the mixture.
Cut open the Vanilla beans and scrape the pods with the back of the knife and add to the mixture and mix well.
In four ceramic ramekins, pour the mixture till half full.
Place the ramekins in the oven and bake it for 15 minutes.
The mixture should be wobbly in the center,
when you take it out of the oven.
If it is still liquidy in the center, put it back again in the oven for a couple of mins and check again.
Remember, if you leave it for long in the oven it will get hard.
Let the yogurt cool down before you place them in the fridge.
Refrigerate for 2 hours at the least if not more.
Top the baked vanilla greek yogurt with fresh seasonal fruits and drizzle with some honey, just before you serve.13
