Blueberry Chia Pudding
BLUEBERRIES are low on calorie & high in nutrients. They are truly the King of Anti-Oxidant food. Both the brain and the heart agree and benefit with it’s properties . Also, did you know it had an Anti-Diabetic effect.Along with the above reasons , I choose them for my CHIA PUDDING for one simple and pure reason – They taste great and I love their hue.
The other phenomenal superfood used in this recipe is Chia Seeds ; which rightfully is placed in the ‘Superfood Section’ in almost every supermarket. And why not , just by incorporating a tea spoon of these gluten-free , high in protein miracle seeds in your daily diet – is sure to work wonders for your health!! Not to forget it has 5 times more Calcium the Milk and 7 times more Vitamin C than Oranges.
Active time :40 mins + 5 mins
Serves : 4 people
1 cup Almond Milk / Soya Milk / Coconut Milk
1 cup Greek Yogurt
1/2 cup Chia Seeds
3 tsp Blueberry Extract
4-6 tbsp Maple Syrup (to your taste)
1 cup Granola
1 cup Blueberries
Handful Dark Chocolate pearls
In a Bowl , Mix the Yogurt and Milk of your preference along with the blueberry extract , Half cup fresh blueberries and maple syrup. Then add the chia seeds and stir well. Let it stand for 30 mins and then whisk once again , making sure to distribute any seeds incase they settled at the bottom. Cover the bowl and refrigerate overnight.
Next morning , fill 4 glass jars – layering them half full with first , the chia pudding. Then adding 2 tbsp of granola and finally topping the remaining half with chia pudding again.
Garnish with remaining fresh blueberries and dark chocolate pearls.
