Cucumber roll-up salad

Why you must make this Cucumber-roll up salad? Because, this salad not only has a visual wow-factor but also has refreshing taste notes.It is made with a melody of super healthy ingredients.

To begin with – Cucumbers, I promise you they are truly made to beat the summer heat. It’s great for staying hydrated, for weight loss and glowing skin as it helps flush out toxins! Moving on to the other ingredient  Beetroot- Beets is all you need to spike your immune system and boost your hemoglobin levels. I can go on about all the other ingredients but am sure I have highlighted their benefits already in my other recipes…so am going to skip it and straight give you this recipe that will fetch you way too many compliments 🙂

Also, I recommend a chilled glass of Prosecco with it. Bon Appétit!

Ingredients for the Roll

1 cucumber ,washed

1 Green apple , chopped

1 Potato , boiled and chopped

1/4 cup crushed Walnuts

1/2 cup pesto

Ingredient for the Beetroot pureé

2 Beetroots ,peeled & boiled

salt & pepper

2 tbsp EVOO

2 tbsp feta cheese

Ingredients for garnishing

Edible flowers &

handful Basil leaves

Pinch of Kosher salt


In a blender add all of the beetroot puree ingredients and give it a churn till you reach a smooth consistency . Make sure to pulse the mix a few times. Transfer the puree in a bowl and set aside.

In a mixing bowl, add the pesto along with the nuts , chopped apple & the potato. Toss well and set aside.

Using a vegetable peeler or spiralizer make cucumber ribbons and set aside.

On a sushi mat arrange the cucumber slices, vertically half on top of the next till you are left with a what looks like a cucumber sheet.

Next, put a spoon of the stuffing all through horizontally.(Just like you would for a spring-rolls or sushi)

Tightly roll the sushi mat to make the cucumber-roll.


Spread the beetroot  puree on the plate and gently transfer the cucumber roll, placing it on top of the puree.

Garnish with basil leaves , edible flowers & pesto . Finally grind some sea salt on top & serve!
