Mango Kale Salad
Let me grab your attention by the mere mention of the fact that Kale has zero-fat and is low on calories!!
Bearing that in mind , I have decided to use it to toss up a light & fresh summer Mango Kale Salad..Kale is super high in – Calcium , Fibre , Iron ,Fibre , Anti-oxidants ,Vitamin K , A and C . So it is fair to say that you will highly benefit by making it a staple in your diet;so if you still haven’t made best friends with this superfood yet – I urge you to.
And this is the Mango season indeed..and cooking with seasonal food is just divine. One is sure to have a radiant dish . This mango kale salad is truly the flavor of the season!

Serves 2 people
1 Bunch kale , stalks removed and discarded
1 Cup Pomegranate Seeds
2 Tbsp Feta Cheese Mousse
3 Tbsp Watermelon Seeds
1 Red Jalapeño , finely chopped
4 Tbsp Olive / Avocado Oil
2 Tbsp Honey
Juice of 1 Lemon
Kosher Salt & Pepper to taste
Wash the Kale well and set it aside in a strainer to get rid of the excess water.
In a Salad Bowl add the ‘Dressing Ingredients’ and whisk well .
Add the Kale , Pomegranate seeds , jalapeño and gently massage the ingredients to bring them together.
To make the Mango Rose , finely slice the Mango cheeks.We build it from the inside out, i.e from the bud to the petals . To make the Bud , take the smallest slice of the mango and coil it tight. Then use the rest of the slices to make the remaining petals , the smallest slices wrapped first around the bud and the bigger ones outwards.
Once the Mango Rose is made , gently place them on the Salad.
Sprinkle Watermelon seeds and finally pipe Feta Mousse to complete your salad.
