Raw Mango Salad
Salads to me means a ‘taste of freshness‘ . To toss a salad together one is spoilt with endless choices as the ingredient’s & sauce’s spectrum is so pretty wide ; that the possibilities are endless. I though constantly catch myself on the greener & fruity end of the ingredient’s and sauce wise , I am inclined towards the zesty.. sweet and sour vinaigrette-y flavors .
This Salad is packed with goodness .. like, handpicked – Herbs . Along with being a highly concentrated source of flavor , Herbs are highly concentrated source of nutrients as well. In fact, some of the herbs have medicinal powers too.
Adding to the wholesomeness is the added fruit & nut – Raw Mango & Peanuts . Raw Mango is packed with exceptionally high source of Vitamin C which intern helps strengthening your immune system . And peanuts – oh my!I love them .. and the good news is they love back – It is high energy food that is also an excellent protein source , which helps in increasing the good cholesterol and decreasing the bad cholesterol .

Serves : 2-4 people
2 cup Raw Mango , grated
1/2 cup Iceberg , finely julienned
1/2 cup Purple Cabbage , finely julliened
1/3 cup Peanuts , roasted and coarsely crushed
Handful Mint leaves , washed and stemmed
Handful Basil leaves , washed and stemmed
Handful Lemon Balm leaves , washed and stemmed
Handful Coriander leaves , washed and stemmed
1/3 cup Shallots , finely julienned and dehydrated / deep fried and left to air dry
For the Dressing
3 Birds eye chill , finely chopped
4 Tbsp Light Soya Sauce
4 Tbsp Peanut / Sesame Oil
5 Tbsp Lime juice
2 Tbsp Coconut/Palm sugar
4 Tbsp Fish sauce
In a Big bowl , put in all the Ingredients of the Dressing and whisk them together .
Then add all the Salad Ingredients other than the shallots and peanuts . Use washed hands to mix them well so that everything is coated with the dressing .
Place the salad on the Salad platter and top it with the shallot and peanuts . Ornament with a few edible flowers (optional).
Serve it Immediately.14
