Shakshuka is a  Middle Eastern delight is made with everything nutritious. The main two elements being Eggs which are truly an Egg-septional super food & Tomatoes our staple produce in the kitchen that beholds a bounty of goodness. It is a quick one pan recipe that you are to directly eat from and begin your day with your family in a communal style meal that brings everyone together and nourishes everyone well enough to power through the day!

1 Onion. Peeled & chopped

1 Red Capsicum. Washed, deseeded & chopped

3 -4 cloves of Garlic. Chopped fine

4 Big Tomatoes. Washed & chopped

2 Tomato paste

3 Large eggs

2 tbsp Olive oil

1/2 tsp Cayenne pepper

1/2 tsp cumin seeds

1/2 tsp powdered coriander seeds

Salt to taste

For garnish

3-4 tbsp of Goat cheese (you may substitute with Feta cheese)

In a lidded frying pan heat the olive oil and add the garlic, onions and capsicum. Once they start to sweat add cayenne pepper, cumin seeds, coriander seed powder and salt and bring it all together. Further cook the mixture with the tomato paste for a couple of minutes before you add the chopped tomatoes and deglaze the pan with 1/4 glass of drinking water.Let it simmer for 5-7 minutes, uncovered.

In the meanwhile, blitz all the pesto ingredients in a food processor to make a paste. Make sure to pulse a couple of times and scrape the sides of the container to make sure you are left with a smooth paste.Keep aside.

Check on the mixture in the pan. It should have reduced by now. At this point make sure it shouldn’t look too dry or too runny. If its too runny let it dry down further and incase it looks too dry add water accordingly to make it moist.Once you have the mixture at the right consistency make three wells in it with your spatula.

In each well brake open an egg and cover the pan with a lid. Cook the eggs till the whites are cooked and the yolk is still runny. This takes all of 3-4 minutes usually but adjust your time accordingly.

Place the pan on a heat-resistance mat on the table and garnish with herbs and dollops of cheese and pesto sauce.
